Hyacinth Beans

These haven’t taken off as well as I had hoped, but the Hyacinth beans are flowering. We should get some pods out of them. At the very least we should be able to collect some seeds and try again next year. These are not cheap, so collecting seeds is mandatory. I’ll be honest, I am a little nervous about eating them the first time, but Sue assures me that they are safe as long as they are cooked. According to the people that sell the seeds the beans that these plants produce contain a naturally occurring cyanide. Cooking them thoroughly takes care of the cyanide, but it still has me being cautious.

    so do apples, and all of your stone fruits like peaches and nectarines. we all consume small doses of cyanide each year and we’re still walking. you’ll be ok ;) or at least no worse off than you are now…
