Birthday Dinner

The night of Emelia’s birthday Amy, Mike and James came over for a visit. I whipped up chicken cacciatore with Sue’s potatoes, my corn muffins (laced heavily with flax seed meal) and a side salad. The chicken took a while to make, but was well worth it. I look forward to making it again. Not knowing what the kids would eat Sue made some chicken nuggets made from chicken tenders.
Since we were planning on having cake on the following Saturday I made up a nice pecan strawberry shortcake dessert. I made it all from scratch with real strawberries. The only thing not made by me was the whipped cream; I opted to use up some old cool whip instead of make my own.
The picture is horribly washed out, but I was in a rush and didn’t take the time to take more than one shot.
I didn’t hear any complaints from James.
